We have Tana wheat No. 61 divided directly from farmers, and we make whole grain flour with homemade flour with stone mills to make bread.
Domestic wheat is not suitable for bread because it has low protein and poor bulge, but it has a strong flavor because it does not bulge. The scent is very strong and the scent is completely different when you make it into bread.
Just so that freshly milled rice is delicious, the aroma and sweetness of bread made with freshly ground flour can be very strong and delicious.
