I want to convey the tradition of Japanese cuisine, such as Gomi, Goshiki, Five Sens senses, and Goho.

"Washoku was registered as a UNESCO Intangible Cultural Heritage in 2013, and many high-quality Japanese restaurants have increased in Yokohama City, so even if one of the ways of folding paper is used, we would like to convey the tradition of Japanese cuisine, such as how to fold celebrations and non-holidays, leaves, Gomi, Goshiki, Five Sens, Five Laws, etc.," says Shimada.


He specializes in Japanese cuisine ritual "Knife-style", which boasts a tradition since the Heian period, and "Mukimono", which makes animals and plants from ingredients such as various vegetables. I want you to feel the joy that you have done. "


In addition to workshops at the Kanagawa Prefectural Culinary Federation and the Yokohama Yorozuya Shinyukai, we also actively engage in activities to convey the food culture of Yokohama, such as cutting vegetables (mukimono) at the Menu Foods SP Association practitioner workshop, and making dashi roll eggs at the Kanagawa Work and Skill Experience Festa.

Using seasonal vegetables, we have excellent skills in the technique of "Mukimono", a skill of Japanese cuisine that has been handed down since ancient times as a method of expressing seasonal flowers, birds, and moons in cooking.

In addition, at the Yokohama Yorozuya Shinyukai, as a normal teacher at Shijo Shinryu's Shikiniku's Shikiniku knives, dedicated knives at Sankeien and Tsurugaoka Hachiman-gu in Kamakura, and pass on skills to young people. .
