I want to convey the taste of a traditional sushi restaurant.

Nakamaru says, "I study every day and I never be satisfied," says Nakamaru, who aims to create sushi that will please customers by offering not only seasonal fish but also sushi using mushrooms such as matsutake.

"Recently, the number of old sushi restaurants has decreased, pushed by rotary sushi. However, there are a lot of good things that you can't taste elsewhere in sushi restaurants," says Nakamaru.

I have been teaching and training backwards at the Yokohama Sushi Trading Association.

In addition, we actively participate in the Kanagawa Prefectural Culinary Fair, etc. hosted by the Kanagawa Prefectural Culinary Association, convey skills widely to citizens and contribute to the promotion of local culture.

After graduating from high school, his father began to hold sushi with Masano Sushi, founded in 1933.

After two years of training at another store, he took over the store at the age of 24.
