The Mechanism of school lunch

○ Implementation method
In Yokohama, school lunch supplies purchased in bulk are delivered to each school based on a uniform standard menu and cooked in the school lunch room.
(In the case of the standard menu lump-sum purchase method)
○ Menu
1.Standard menu
The menu is unified throughout the city, and is examined by the `` Menu Creation Committee '' composed of school principals, teachers, nutrition teachers, school nutrition staff, cooks, Yokohama School Food Education Foundation staff, and Board of Education Secretariat staff. It is decided by the Board of Education.
2.School-specific menu
This is a school-specific menu related to school events and learning, and is used in conjunction with the standard menu. We set menu contents and dates based on the educational goals and educational plans of each school, and operate school lunch by taking advantage of the uniqueness of each school.
○ Procurement of school lunch supplies
1.Collective purchase
In order to ensure a stable supply of high-quality and safe supplies, we will collectively purchase supplies for school lunch through the Yokohama School Food Education Foundation.
Bids are made according to the type of food, and contractors deliver them to each school.
2.Independent procurement
Each school procures ingredients when using "local agricultural products" where large quantities are difficult to collect, and when conducting school-specific menus.
○ Safety and security of ingredients
1.School Lunch Food Safety Monitoring Committee
(Public Goods) A committee established at the Yokohama School Food Education Foundation conducts safety evaluations on ingredients and formulates countermeasures to respond immediately to urgent food problems.
2.In order to ensure the safety and security of supplies for school lunch, we purchase them in accordance with the standards of "Standards for School Lunch".
★The main rules are as follows.
・The main raw material is non-genetically modified foods.
・We strive to refrain from using coloring agents, colorings, preservatives, chemical seasonings, and artificial sweeteners.
・For frozen foods, meat processed foods, fish kneaded products, etc., we manufacture products unique to Yokohama City. We hold a material selection committee consisting of representatives of school lunch officials (school principals, school nutrition staff, cooks, and staff members of the Yokohama School Food Education Foundation and Board of Education Secretariat staff).
○ Response to food allergies
Since the symptoms of elementary school student food allergies vary, each school holds an allergy response committee to decide how to respond based on the "Life Management Guidance Table" prepared by a doctor.
Allergy information on ingredients used in the standard menu is available on the website of the Yokohama School Food Education Foundation (https://ygs.or.jp/ (outside site)).
