1 Content of this time
(1) Hygiene management in accordance with HACCP
Recently, a guidebook for catering facilities, "Handbook for Hygiene Management Based on HACCP-Contracted school lunch Office" has been released on the Ministry of Health, Labour and Welfare website.
In each childcare and educational facility, hygiene management is being carried out in accordance with the “Manual for Mass Cooking Facilities Hygiene Management” (final revision: 0616 No. 1 from raw food on June 16, 2017). We ask that the food hygiene manager appointed at each facility, etc., make rules for hygiene management by referring to this guidebook.
If you have already implemented hygiene management above this guide, you do not need to drop the level, so please continue to manage and establish a hygiene management system.
In addition, in the cooking business consignment implementation garden, the facility (garden) side and the food hygiene manager of the trustee will confirm whether the contents of this guidebook are being carried out or planned to be carried out, and as soon as they are ready. [Common Matters]
Oh, school lunch notification certificate and food hygiene manager certificate issued based on the old Food Sanitation Law enforcement regulations will be invalid. You do not need to return it to the ward Health Sanitation Division.
B. In the newly notified business notification based on the Food Sanitation Law, there is no certificate issued to indicate that it has been notified.
C) For newly registered food hygiene managers, it is possible to continue using the currently acquired “Food Sanitation Officer Card”, but if desired, a new responsible person's card will be issued if desired.
D. If the food hygiene manager of the garden is changed due to personnel change or Retirement, please submit the “Application for Business Permit / Business Notification Items Change Notification” to Health and Welfare Center Health Sanitation Division in each ward. In that case, it is necessary to attach a copy of a nutritionist's license, cook's license, and a certificate of completion of the food hygiene manager training course.
The certificate of completion of the Food Sanitation Officer Training Course has no expiration date, so please keep it in a safe place.
2 About lunch facilities with less than 20 meals served at one time
In accordance with the notice from the State, this provision is exempted. Applicable if there are more than 20 meals, including staff meals. Regarding hygiene management, regarding hygiene management, refer to the “Guidelines for Hygiene Management incorporating HACCP Approach-for-Small General Restaurant Operators” published on the Ministry of Health, Labour and Welfare website.
