About prevention of food poisoning by anisakis

What is Anisakis?

Anisakis is a translucent white parasite of about 2-3 cm, and parasites on mackerel, sardines, saury, bonito, squid, etc.

Symptoms of food poisoning caused by anisakis

After eating sashimi or shimesaba with anisakis, it may cause severe groin pain and nausea may occur several hours to ten hours later. In some people, symptoms such as itching and rash due to allergic reactions may appear.

Points to prevent anisakis food poisoning

  1. Choose fresh seafood and remove internal organs quickly.
  2. Refrigeration processing (-20°C, 24 hours or more) and heating
  3. Check carefully visually to remove anisakis.

Be careful! Anisakis does not die with vinegar, wasabi, soy sauce, etc.

To prevent food poisoning, freezing treatment (-20°C, 24 hours or more) and cooking are effective.
