Slaughter inspection

Based on the Slaughterhouse Law, cattle, horses, pigs, sheep and goats are inspected by slaughter inspectors who are qualified as veterinarians for each animal.

Slaughter tests are divided into biological tests, pre-demolition inspections, and post-demolition inspections. Those that pass the inspection are stamped and shipped as meat.

1 Biological examination

Inspect the appearance of livestock in the living state for abnormality. If you have a livestock infectious disease, etc., it will be prohibited.

2 Inspection before dismantling

After passing the biological examination, it will release blood. At this time, observe the properties of the blood, and if any abnormalities are found, disassembly is prohibited.

3 Post-Dismantling Inspection

All parts, such as muscles and organs, are inspected and palpation are performed, and incisions are made and observed.

If you find a systemic illness, dispose of it all, and for limited lesions, dispose of only part of that part.

In addition, if it is difficult to judge only by examining the naked eye, etc., a detailed examination (microbial test, pathological examination, physicochemical test) will be performed to make a judgment.

Inspections after dismantling are divided into head inspection, internal organs inspection, and carcass inspection.

4 BSE inspection

From April 1, 2017, BSE (coovine spongiform encephalopathy) screening tests have been conducted for cattle over 24 months old who have suspected neurological symptoms and systemic symptoms in biological examinations.

5 Seals

If you pass the inspection, the seal will be stamped and distributed as meat.
