And slaughter inspection

Last Updated April 5, 2021

In accordance with the "Slaughterhouse Law", cattle, horses, pigs, sheep and goats in the slaughterhouse are inspected by livestock inspectors if they are qualified as veterinarians for each animal.

The livestock inspection is divided into biological inspection, pre-demolition inspection, and post-demolition inspection. Those that pass the inspection are stamped and shipped as meat.

1 Biological test

Inspect for abnormalities in the appearance of livestock in a living state. If you have a livestock infectious disease, etc., it is prohibited.

2 Before dismantling inspection

After passing the biotest, the blood is released. At this time, we will mainly observe the properties of the blood, and if abnormalities are found, we will prohibit dismantling.

3 Inspection after dismantling

All parts, such as muscles and organs, are examined by naked eye and palpation, and incision as necessary.

If a systemic disease is found, all it will be discarded, and limited lesions will be partially discarded.

In addition, if it is difficult to judge only by examining the naked eye, etc., a detailed examination (microbial examination, pathological examination, physicochemical examination) is performed to judge.

Inspection after dismantling is divided into head inspection, internal organs inspection, and carcass inspection.

4 BSE inspection

From April 1, 2017, BSE (bovine spongiform encephalopathy) screening tests have been conducted for cattle who are 24 months old or older and have suspected neurological symptoms in biological tests and who have systemic symptoms.

5 Seals

If you pass the inspection, a seal will be stamped and distributed as meat.
