Did you know that there is a bakery where people with disabilities work in Yokohama City?
This month, I've been interviewing the site of "I am a bakery in the city" where people with disabilities are active. By the time you finish reading this, you will definitely want to go to "town bread"! That's right.
In addition, in public information Yokohama August issue (outside site), we introduce event information of city hall including "town bread", so please see together.
What is "I am a bakery in the city?" ?
"I am a bakery in the city (commonly known as street bread)" is a project aimed at providing a place for people with disabilities to participate in society, raising awareness, and improving sales capabilities. We display and sell bread produced by facilities and workshops in Yokohama City Hall that provide places for daytime activities for people with disabilities in Yokohama.
It is held every Wednesday and Friday (excluding holidays) from 12:00 to 13:00 in the multipurpose space on the second floor of the city hall. Each office sells unique and delicious bread by opening two offices each day.

I've been infiltrating the bread making site!
This time, we interviewed a social welfare corporation opening society "Kyotosha" in Nakatanishi, Izumi-ku, one of the store operators, about making bread.
At this facility, 12 people with disabilities are currently making bread.
The flour used is made from cultivation to milling ground with a stone mill. When the wheat is ground with a stone mill, the outer skin enters and the flavor of the wheat is produced, so it is said that the aroma and umami are enhanced.
On the day of the interview, I visited after 9 o'clock in the morning.
Let's take a look at the cooking room.…In the middle of making bread!
While receiving the advice of a baker (professional instructor), everyone faces the bread at their own place.
From 10 o'clock, the cooking room is busy with eyes to sell bread at bakery & cafe on the premises. The bread dough prepared and laid down from the previous day is molded into various shapes and seasonings.
By the way, on the day of opening a store in "I am a bakery in the city", the number of breads to be manufactured increases, so it will be more busy. It seems that the staff will prepare.

Fresh baked bread! It's the last finish.
The finished bread will be sold at the bakery & cafe "Hanamura" adjacent to the cooking room. Here you can also have freshly baked bread you bought in the store.
Freshly baked bread is brought from the kitchen steadily, so the sales staff will line up in the shop. We carefully pack them in transparent bags one by one, paste a price tag, and arrange them while devising so that the taste of pride can be conveyed more.
The co-working building also manufactures and sells pottery such as tableware. Of course, the dishes that display bread are also works of the pottery team.
We also make sandwiches in the kitchen of the store.
After sliceing the baked bread, measure the amount of mayonnaise and sauce, and put it carefully. It looks very delicious with plenty of ingredients and beautiful arrangement!

― What do you care about when you work?
"It's to sell with a smile."
― What kind of bread do you recommend?
"It's cream bread. It's delicious because it contains handmade custard cream."
He is a sales representative for 10 years, and is good at remembering customer faces.

― Which bread are you in charge of?
"I'm in charge of making pizza. I'm thinking about how to paint the sauce and how to put the ingredients in a good look. "
― What kind of bread do you recommend?
"Everything is delicious enough to get lost! I can't narrow down to one."

― Which bread are you in charge of?
"It's a winner roll and chocolate genkotsu. Choco-genkotsu is difficult to wrap the chocolate chips so that they do not come out, but I work carefully."
― What kind of bread do you recommend?
"It's kimchi bread!"
― What? Kimchi bread was sold today.…?
"I love spicy food! I think kimchi will go well with bread, so I would like to make kimchi bread!"
Mr. Niijima, who has a lot of ideas for new works.
The impression of talking with you is that you are full of smiles and are working lively and happily. Above all, I was proud of my professionalism and pride in the job of bread production and sales that I was involved in, and I felt very much the pride of "I want to deliver delicious bread to more customers."

For this reason, we select work that matches the characteristics of the person so that they can learn one by one. In addition, the work is divided into work so that it can be done while checking with illustrations and samples. On Friday, July 19, we also interviewed “City Bread” held at City Hall. There are two stores, "co-working building" and "gifferi". I would like to introduce you to the backstage of the sales.

Unlike selling at regular stores, I'm busy with lots of preparation.
At 12:00, the store is finally open.
Customers coming one after another choose their favorite bread, put it on a tray, and line up in the accounting line.
In addition to side dishes such as sandwiches and sweet bread, baked goods are also sold together, so some people buy them saying, "I've bought lunch at other shops, but it looks very delicious for snacks."
The store is closed at 13:00.
At both stores, customers were not interrupted, and sales were strong. Most of the bread was purchased by customers.
It's a busy hour, but it's very encouraging to see the bread we've made selling in front of you.
Aiming to be a town where you can live like yourself
I also spoke to the Health and Social Welfare Bureau Disability Independence Support Section, which is the business division of the bakery in the city.
Why did you start a business called “town bread”? Could you tell me how it was?
The project started in 2005 by volunteer staff. We hope to provide a place for people with disabilities to deepen their understanding of employment through “town bread”. We aim to be a town where everyone without disabilities can live on their own will as a member of a community-friendly society while respecting personality and individuality.
Could you tell us about the future prospects of “town bread”?
Thankfully, there are a lot of people who buy them as regulars. By taking advantage of opportunities such as fairs, I hope that more people will be able to interact with “town bread” and learn about initiatives such as facilities for the disabled and employment support.
What other initiatives do you have for employment support and enlightenment?
"Agricultural Fuku Marche", which sells processed vegetables and agricultural products produced and manufactured by disabled welfare establishments in the city hall, and users of disability welfare services can observe and experience various working styles in companies. I want to work! I have a tour of my work and experience sessions.
Also, on September 6th, "I want to work! Under the title of "My Symposium", we will hold a symposium on the theme of employment, aiming to deepen people with disabilities' understanding of "working" and create opportunities to think "want to work". Not only people with disabilities, but also their families, support organizations, companies, etc. are eligible. As we are going to sell products such as facilities for the disabled, please come to the city hall atrium of the venue!

Through this interview, I felt the importance of participating in society and the great potential to create working with friends with the same goals. Working in society increases what we can do and joy increases. The bread filled with your hard thoughts was full of its deliciousness.
"I am a bakery in the city" has many facilities for the disabled in the city, and you can purchase bread with distinctive characteristics every day. There are plenty of seasonal menus, so be sure to taste the bread filled with the ingenuity of each facility.
