Parasite inspection

Last update date April 2, 2024

We are testing parasites that cause food poisoning.

Kudoa septenpuncttata

What is Kudoa Septenpuncttata?

Kudoa septenpuntata is a type of parasite called mucus spores that mainly parasitizes sea fish. Many food poisoning cases are particularly related to raw flounder for raw flounders, and transient vomiting and diarrhea occur several hours after eating, but the symptoms are mild and recover quickly.
Fresh flounders, whose number of Kudoa spores has been confirmed to exceed 1.0 x 10 squares per g of muscle are to be treated as violating Article 6 of the Food Sanitation Law. We regularly conduct inspections on flounders distributed in the market.

Prevention of food poisoning due to Kudoa

-Kudoa's pathogenicity is lost by freezing for more than 4 hours at 20 ° C or heating over a central temperature of 75 ° C for 5 minutes or more.

Measures against Kudoa in aquaculture farm

It is not known at this time how Kudoa parasitizes flounders, but in order to prevent food poisoning due to Kudoa, in flounder farms, etc. It is necessary to take measures such as cleanliness and inspection before shipping.
